All these buildings are used as settings for German TV oder movie productions quite often, so it is not necessarily blood...
It's probably mold.

As far as I know, mold doesn't grow like that... Then again, we cannot see all of the splatter can we?
Not that it has to be blood. I'm surprised that there isn't more graffiti in most of these places. It seems like there's almost always just one room that gets most of it. Are some places in these buildings just harder to get to due to decay or other reasons?
Yes, a few buildings required some climbing, but not many. Most of the really open areas were heavily spray painted during my last visit.
