Good engineering design on the table. The little gullies would direct all the body fluids toward the drain.

Nah, they didn't cook 'em , they just butchered 'em. That box with holes to which you are refering was used to put organs in.

I have that same pattern on a meat platter I use when company comes over for dinner - go figure.
I like the fact that there are 12 limb buckets on the table behind the slab :)
